<p>What could be better on a cold winter day than a good hot bowl of healthy but tasty soup?  Personally, I love soup any time of the year, but I find it especially enjoyable in the wintertime.  This recipe is great because it is quick, easy, tasty, healthy, and a perfect way to use up leftover turkey (or chicken).  It is also easy to make by cooking a diced chicken breast or a couple of thighs if you don&#8217;t have leftover available.  Even better, you can use the meat from a deli roasted chicken or could even cube up a hunk of deli meat.  However you choose to make this soup it is still easy and quick.  In today&#8217;s busy households, especially during this time of the year, that can be very important.  So give this soup a try the next time you need a quick, easy meal.</p>
<p>TURKEY BEAN SOUP</p>
<p>1 tsp olive oil</p>
<p>1 small onion, chopped</p>
<p>1 tsp dried rosemary</p>
<p>1/2 tsp black pepper</p>
<p>1/2 lb cooked, cubed or shredded turkey (or chicken)</p>
<p>1 can (14-oz) fat-free reduced sodium chicken broth</p>
<p>1 can (14 to 15 oz) stewed tomatoes</p>
<p>1 can (15-oz) cannellini beans</p>
<p>Hot pepper sauce to taste</p>
<p>Heat the olive oil in a large saucepan.  Add the onion and cook 4 to 5 minutes or until tender, stirring occasionally so it will not burn.</p>
<p>Sprinkle the rosemary and pepper over the turkey and add to the onion in the saucepan stirring to mix well.  Add the broth and the tomatoes (do not drain); bring to a boil.  Cover the pan, reduce heat to simmer and allow to simmer for about 10 minutes.  Add the beans, stir to mix in, and cook another 10 to 15 minutes, uncovered, until the soup begins to thicken.  Add hot pepper to suit your taste.  Turn off heat and ladle the soup into serving bowls.  Garnish with sprigs of fresh parsley, if desired.</p>
<p>NOTES:  Leave out the hot sauce and allow each person to add it to their bowl, if desired.</p>
<p>This is a great way to use leftover turkey or chicken for a quick, easy, diabetic-friendly light meal.</p>

<p>You can come home after a long day of work, errands, volunteering or whatever else you do on your busy days to the welcoming aroma of this Slowcooker Shrimp and Sausage Soup.  If you are thinking shrimp in a slow cooker can&#8217;t be right, you are only half wrong.  This tasty soup cooks for 6 to 8 hours in the slow cooker or crockpot then you add the shrimp after you get home.   They only have to cook for 15 minutes. This is a perfect way to enjoy a good soup shortly after arriving home from a long day.  And another good thing is that you can enjoy shrimp, sausage, tomatoes, potatoes, other vegetables, etc without having a kitchen full of dirty pots and pans.SLOW COOKER SHRIMP AND SAUSAGE SOUP1 can  (14 1/2-oz) fire-roasted diced tomatoes4 medium red potatoes, washed &#038; quartered1/2 lb smoked sausage, sliced1 green bell pepper, diced1 stalk celery, sliced1 cup water1/4 cup chopped onion1/2 tsp paprika1/2 tsp minced garlic1/4 tsp dried thyme1/4 tsp salt, optional 1 lb medium shrimp, peeled &#038; deveinedIn a 3-quart slowcooker, combine the tomatoes, potatoes, sausage, bell pepper, celery, water, onion, paprika, garlic, thyme, and salt, if using.  Gently stir until all the vegetables are covered with liquid.  Cover and cook on low setting for 6 to 8 hours.  Turn the heat up to high and add the shrimp.  Push the shrimp down into the soup for them to cook properly.  Put the lid back on the slowcooker and cook for another 15 minutes or until the shrimp are just cooked through.  Garnish each bowl with a small amount of chopped cilantro, if desired.Yield: 4 servings at 446 calories, 21 grams carbs and 35 grams protein each.Enjoy!</p>

<p>A great vegetarian soup recipe is not just all about preparing your appetite for a healthy vegetarian meal &#8211; it should be healthy as well.  To help you come up with some of your very own vegetarian soup recipe, here are some tips.</p>
<p>Experiment</p>
<p>When it comes to vegetarian recipes, there is really no hard-and-fast rule. You just have to follow the preliminary basics and then let your imagination rule. This means that you may just have to sauté the usual garlic, onions and your choice of vegetables, add the soup stock or vegetable broth and then add whatever you like including spices. If you are preparing a cold and raw vegetarian soup recipe, then you can experiment by swapping some ingredients like watermelon for tomatoes or vice versa.</p>
<p>The only general rule is to basically respect your taste buds and whoever you are cooking for. It would be better though to reserve experimentation on your free days and simply use tested soup recipes on regular days when you have little time.</p>
<p>Be Generous with Spices</p>
<p>At times, a small portion of green onions, celery or carrots sauted in onions will make a big difference in taste. Other soup recipes however may need a little more than the usual herbs and spices. Try a few mixes like oregano and rosemary; pepper and lemon or pepper and lemon grass. You can also use other spices like cayenne and cumin. One tip with vegetarian soup recipe seasoning is to use an appropriate amount or mix of spices so you can cut back on salt.</p>
<p>Thicken the Soup</p>
<p>To make the soup more savory, make the texture just right &#8211; not too thin, and not too thick. Texture may of course be improved by thickening the soup. One secret of oriental cooks is that they use flour or cornstarch to thicken a vegetarian soup recipe instead of using milk. Some would suggest adding a precise number of parts of flour or cornstarch to water but sometimes you just have to make an estimate.</p>
<p>To put more texture or thickness to your soup, simply add a small amount of cornstarch. Simply mix a small amount of cornstarch with some warm water and then slowly pour the mixture while stirring in soup that is just about ready to be taken out of the fire.</p>
<p>Convert</p>
<p>Non-vegetarians usually add meat to make the soup tastier. However, vegetarians can substitute the meat with other ingredients. Aside from spices, pepper and green onions, you can also add a bit of soy sauce to give your soup some flavor. Beans can also add to the flavor of your vegetarian soup recipe and even supply much needed protein which others normally get from meat. Aside from beans, peas, lentils and squash are also tasty additions to vegetarian soup.</p>
<p>Freezing Soup</p>
<p>One great thing about soup is that you can prepare more than enough and freeze the rest for the next day. Just make sure that before you freeze soup, you allow it to cool completely first. Have it chilled so that you can remove excess oil before transferring it to small containers for freezing. Makes sure there is some extra space in your container after the soup has been transferred to allow the liquid to expand.</p>
